Like a lot of other purple vegetables, aubergines contain lots of agents that protect against cancer.

Water accounts for most of an aubergine's weight. Compared with other vegetables, aubergines contain a moderate amount of fibre, most of which is found in the skin and seeds. They contain mineral salts like potassium, and small amounts of phosphorus, calcium, magnesium and iron, as well as folic acid and vitamin C.

Aubergines are really healthy because of their antioxidant content, which gives them their slightly bitter flavour.
